Red Lentil Soup

I had this soup at my sister Mary's home this fall. I especially like the lemony flavor the soup has.

Ingredients

  • 2 tablespoons avocado oil or olive oil
  • 1 small oniondiced
  • 1 large carrotdiced
  • 2 stalks of celerydiced
  • 4 cloves garliccrushed
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon salt
  • Freshly ground black pepper, to taste
  • 4 cups vegetable broth
  • 2 cups water
  • 1 (15 oz.) can crushed tomatoes
  • 1½ cups red lentilssort and rinse before using
  • 3 cups spinach or mix of greens, I used a “power greens” blend of spinach, arugula and baby chard
  • 1 lemonzest and juice

Instructions

  1. In a soup pot, heat the avocado or olive oil over medium heat. Once the oil is shimmering, add the onion, carrot, and celery and cook for about 5 minutes, until the onion is translucent.
  2. Add the garlic, grated ginger, cumin, turmeric, garlic powder, ginger powder, salt, and pepper, and stir to combine and coat all the veggies in the spices.
  3. Let cook for 2 minutes, until fragrant, and then add the vegetable broth, water, tomatoes, and red lentils. Stir and bring to a boil, then turn down and let simmer for 30-40 minutes, until the red lentils are soft. Taste, and add more salt to your tastes if desired.
  4. If desired, puree half the soup to help make it creamier. You can also just leave it as is if you prefer a more broth-y soup. I pureed some of mine with an immersion blender.
  5. Stir in your greens and let them wilt, and then add in lemon juice and zest. Serve with more lemon if desired (I recommend), and garnish with some microgreens!

Zucchini Fritters

Adding more vegetables to my diet is my current goal and finding tasty recipes helps me to reach that goal. Although I didn't have the cheesecloth needed in this recipe, I was able to strain out enough moisture of the zucchini that they still held together okay.

4 servings

  • 1 ½ pounds zucchini, grated

  • ¾ teaspoon salt

  • ¼ cup all-purpose flour

  • ¼ cup grated Parmesan cheese

  • 1 large egg, beaten

  • 2 cloves garlic, minced

  • kosher salt and ground black pepper to taste

  • 2 tablespoons olive oil

    Toss the zucchini with salt and let drain. Squeeze out the excess juice with a cheesecloth, mix the zucchini with the remaining ingredients, then cook the fritters in oil until fried on both sides.

Lamb Burgers

Long-time friends Carol and Dave invited us to join them for dinner under the grape arbor on their patio a few weeks ago. Dave's bountiful garden (his summer passion) provided all of the greens and vegetables, which were deliciously fresh. The main course was lamb burgers and they were so good that I had to look for a recipe so they could become part of my summer grilling routine. Here's the recipe I found.

Lamb Burgers 
4 servings

Ingredients

  • 1 pound ground lamb
    1 tablespoon garlic powder
    1 4-inch sprig rosemary, chopped
    4 sprigs thyme, chopped
    1 pinch salt
    1 pinch ground black pepper
    3 tablespoons mayonnaise
    1 tablespoon Dijon mustard
    4 hamburger buns, split and toasted
    4 thick slices tomato
    1 cup baby mixed salad greens

    Directions

    1. Preheat an outdoor grill for medium heat and lightly oil the grate.

      Mix ground lamb, garlic powder, rosemary, thyme, salt, and pepper together in a large bowl until thoroughly combined. Shape mixture into 4 patties.

      Place patties on the preheated grill and cook until firm and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Alternately, you can cook the patties to your desired degree of doneness.

White Chocolate & Macadamia Nut Blondies

From Williams & Sonoma--

Ingredients

1 stick of butter (8 TBSP)

  • 1 1/4 cups firmly packed light brown sugar
  • 2 tsp. instant coffee or instant espresso
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1 cup all-purpose flour
  • 3/4 cup macadamia nuts, coarsely chopped
  • 3-4 oz. white chocolate chips
 Instructions

  1. Preheat the oven to 350 degrees. Prepare an 8 x 8 inch pan with baking spray & parchment paper. Cut the parchment in two 8 x 12 rectangles. Overlap the sheets of parchment, one in each direction, so that you have overhanging "handles" of parchment with which you can lift the blondies after they are baked.                                                                                                                                                          
  2. Beat the butter, brown sugar, espresso powder & vanilla until they are light and fluffy. Add the eggs and blend until well mixed.
  3. Fold in the flour with a spoon and then mix in the nuts and white chocolate.
  4. Use a spatula to empty the batter into the prepared pan. Even the top.
  5. Bake for 35-40 minutes. Remove from the oven and lift out of the pan using the parchment handles. Cool completely before serving.

Ginger Lime Black Cod (Sablefish)

We were at a fish market in Portland OR and bought some "black cod" to cook. As I was looking for a simple, quick recipe, I learned that black cod is really sable fish. This recipe also works for Chilean sea bass. It's quite delicious and my sister made it for us with sea bass at Thanksgiving

Ginger Lime marinade for Black Cod or Sea Bass 

 

  • TOTAL TIME: 50 minutes
  • YIELD: 4 servings 

In this simple recipe for Ginger lime marinated Black Cod, the fish is quickly marinated with garlic, lime and fresh ginger. The flavor combination is truly delicious with the rich-tasting fish. Serve with fresh chopped cilantro on top. It is a simple way to bake sablefish it in the oven with only 10 minutes of preparation time.

·       1 clove garlic, finely grated with a rasp style grater

·       1/2 teaspoon lime zest

·       2 tablespoons lime juice

·       2 tablespoons agave syrup

·       1 tablespoon extra-virgin olive oil

·       1 1/2 teaspoon grated ginger root

·       1 teaspoon kosher salt

·       4 4-5 ounce portions black cod or sablefish fillet, about 1 pound


Instructions

1.     Whisk garlic, lime zest, lime juice, agave syrup, olive oil, ginger and salt in a small bowl.

2.     Place sablefish in a large resealable plastic bag. Pour the lime mixture over the fish, press the air out of the bag and seal. Agitate bag to coat the fish in the marinade. Refrigerate, 30 minutes to 1 hour.

3.     Preheat oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper.

4.     Remove fish from the marinade and discard the marinade. Place fish, skin side down on the parchment and transfer the baking sheet to the oven.

5.     Bake until the fish is cooked through and just flakes apart when pierced with the tip of a knife, 12 to 15 minutes. 

 

Mushroom Barley Soup

It's that time of year when I could just eat soup for dinner and be satisfied. I love Whole Foods mushroom barley soup that is available in Boulder but not in Salt Lake City. I found this recipe last year and have made it a couple of times and like it.

This healthy and hearty soup is easy to make and is perfect for a cold day!

Ingredients

·       1 cup barley

·       1 tablespoon olive oil

·       1 large yellow onion chopped

·       2 cloves garlic minced

·       2 carrots peeled and diced

·       2 celery stalks diced

·       1 16 oz package of white button mushrooms, sliced

·       3 15 ounce cans low sodium vegetable broth

·       1 cup water

·       2 bay leaves

·       2 tablespoons fresh thyme minced

·       Salt and pepper to taste

Instructions

1.              In a medium pan, bring 4 cups of water and the 1 cup of barley to a boil. Cover, reduce heat to medium-low, and simmer for 30-40 minutes, or until the barley is soft. You can make this the night before.

2.              Heat the olive oil in a large pot over medium heat. Add the onion and garlic. Cook until soft. Add the carrots and celery and cook until tender, about 5 minutes. Add the sliced mushrooms and cook until they are soft. Add the vegetable broth, water, bay leaves, and fresh thyme. Simmer for about 10 minutes. Stir in the cooked barley and cook for 15 minutes or so.

3.              Remove the bay leaves. before serving. Add salt and pepper to taste. Serve hot.

Chicken Pot Pie

A childhood favorite is comfort food today. I had never made chicken pot pie until this week when I was thinking of what to do with the rest of the roasted chicken that was in the frig. Pillsbury had the recipe that seemed the easiest and so I tried that one. It did not disappoint, in fact, it's a delicious keeper!

Crust

1     14.1 oz refrigerated Pillsbury pie crust (2) softened OR two ready made pie crusts from the frozen food section at the grocery store.

Ingredients

1/3 cup butter

1/3 cup chopped onion

1/3 cup all purpose flour

1/2 tsp. salt

1/4 tsp. ground black pepper

1/4 tsp. ground thyme

1 1/3 cup chicken broth

1/2 cup milk

2 1/2 cups shredded chicken or turkey

2 cups mixed frozen vegetables

Instrcutions

Heat oven to 425°F. Prepare pie crusts as directed on box for two-crust pie using 9-inch glass pie pan.

 

In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper, and thyme until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

 

Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust.

 

Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

Beet Arugula Garbonzo Bean Salad


Yield: 6 servings

  • 1(15½-ounce) can chickpeas, drained and rinsed
  • Salt and freshly ground black pepper
  • 1½ teaspoons ground coriander
  • 3 tablespoons olive oil
  • 1 orange
  • ¼ cup full-fat Greek yogurt
  • 3 tablespoons rice vinegar
  • 2 pounds cooked whole red or golden beets (store-bought or homemade), peeled and cut into ½-inch-thick rounds
  • 3 cups baby arugula

Step 1
Heat the oven to 400 degrees. Spread the chickpeas on a small baking sheet and pat dry with a kitchen towel. Season lightly with salt, black pepper, ½ teaspoon coriander and 1 tablespoon olive oil. Roast the chickpeas until golden brown and crispy, shaking the sheet halfway through baking, 20 minutes. Remove from the oven, and while still warm, zest the orange over the roasted chickpeas. Stir to combine.

Step 2
Meanwhile, in a small bowl, whisk the yogurt, 1 tablespoon olive oil, 2 tablespoons rice vinegar and the remaining 1 teaspoon ground coriander. Season with salt and pepper to taste.

Step 3
In a medium bowl, toss the beets, remaining 1 tablespoon olive oil, remaining 1 tablespoon rice vinegar and season with salt and pepper. Add the arugula and toss to combine.

Step 4
To serve, spread half of the yogurt dressing on a serving platter. Add the beet mixture and scatter the chickpeas all over the top. Spoon the remaining yogurt dressing over everything and serve immediately.

Mussels

This is the easiest and my favorite way to prepare mussels.  The recipe comes from the NY Times.

INGREDIENTS

 

Yield: 4 servings

 

  • 2tablespoons extra-virgin olive oil, plus more for toasts
  • 2garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
  • Pinch of crushed red pepper
  • 4pounds mussels, cleaned
  • ¼cup white wine or water
  • 1baguette, split lengthwise, then cut crosswise in half
  • 1cup roughly chopped parsley

 

 

PREPARATION

  1. Step 1

Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.

  1. Step 2

Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.

Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.
